Dip the brown rice paper in water for a few seconds and place on a cutting board. With your hands, roll the rice paper into a log. Using a knife or scissors, cut them into small boba-like shapes. In a saucepan, add the water and coconut sugar. Add the bobas and bring to a boil. Cook for 3 to 4 minutes until the water evaporates and becomes a jelly consistency. Take off heat.
