These colorful salad jars are one of my favorite ways to prep healthy lunches for the week. The simple upgrade? I add a capsule of Just Thrive Probiotic right into the homemade dressing. It’s an easy way to support gut health while keeping the flavor fresh and delicious.

What you need

cup black beans

cup red bell pepper
tbsp fresh mixed herbs

cup cherry tomato
cup romaine lettuce

tbsp feta

tsp fine sea salt

cup cucumber
Instructions
First, prepare the dressing: whisk together 4 tbsp extra virgin olive oil, 1 tbsp fresh chopped herbs (parsley or dill), ½ tsp sea salt, ¼ tsp freshly cracked black pepper, and 1 opened capsule of Just Thrive Probiotic (sprinkle into dressing). Divide the dressing evenly between two 32 oz jars. Next, layer the salad ingredients into each jar in the following order: 1 cup black beans, 2 tbsp crumbled feta cheese, ¼ cup diced red bell pepper, ½ cup sliced cucumber, ½ cup halved cherry tomatoes, 6-8 whole Kalamata olives, and 1½ cups chopped romaine lettuce.
