Vegan & Gluten-free French Madelines with a hint of lemon

This easy, one-bowl recipe for vegan and gluten-free French Madelines is fun to make with kids. It features a hint of lemon and a chocolate drizzle. Historically, Madelines were brought to France by a girl named Madeline after her pilgrimage.
In a bowl, start by adding all dry ingredients (oat flour, gluten-free flour, coconut blossom sugar, arrowroot powder, aluminum-free baking powder) and mix until well combined. Then, add the wet ingredients (oat milk, lemon zest, lemon juice, melted coconut oil or avocado oil, vanilla extract) and mix again until fully incorporated.
Brush a Madeline pan with coconut oil. Pour the batter into the molds (a regular spoon can be used for this process). To remove any air bubbles, gently tap the pan on the counter.
Preheat your oven to 350°F (175°C). Bake the Madelines for 22-23 minutes.
While the Madelines are cooling, melt the coconut blossom dark chocolate chips with 1 teaspoon of coconut oil. After baking, let the Madelines rest and cool completely. Once cooled, drizzle some of the melted chocolate on one side of each Madeline.
